Welcome! I'm Caitlin Coughlin, your typical twenty-something year-old foodie with my eye on the prize. What prize? I'm on my journey to reach my goals and become a Registered Dietitian.

I've recently graduated from The Florida State University with my degree in Dietetics. For those of you who are unfamiliar with the process, before you can become a Registered Dietitian you must complete a particular kind of internship (similar to clinical rounds for doctors) to be able to sit and take the RD exam. This is where my journey begins. After applying to six separate, and very competitive internships around the country, I am proud to say that I was matched to the University of Arkansas for Medical Sciences located in Little Rock, Arkansas, and my journey begins in just a few weeks!

After beginning to tell family and friends about the big move, you can only imagine how they've reacted. "Arkansas?" I've decided to create this blog to tell my story about living in a new city half way across the country, trying to find any spare second to explore, while being busy with my internship.

My internship focuses on Clinical Dietetics, as well as Administrative Dietetics, where i'll be working at several different hospitals and other locations throughout the state. Along with my journey outside of the program, i'll also be keeping you informed on all of the cool things I'm learning throughout the program as well.
